Marsh,

as you say, the only functions provided by the sound card are the
conversions back and forth between the analog and the digital realms.

Sometimes it is possible to read DSP advertised on some sound cards.
In such cases DSP means "Digital Sound Processor" and not "Digital
Signal Processor"... those chips are mainly used for the handling of
MIDI, to synthesize musical sounds starting from wave tables, and/or
to add special effects as reverber, echo, etc..
When talking of SDR, all the processing is done on the CPU of the PC,
be it a Pentium or an Athlon. Both provide superb floating point performance,
that rival the computing power of dedicated DSP chips, bar the most
powerful ones.
