It is possible to run Oracle 11g as I have that on my spacewalk server (0.5, then 0.8), but I put it in from scratch. I can't think of any reason why it wouldn't work just the way you describe below. /usr/sbin/rhn-satellite looks for /etc/init.d/oracle or oracle-xe so you should be good with just changing over to the new one.
Of course you will want to make sure it is running on the same ports as xe. YMMV.
