After renaming the .spamassassin directories in each of the affected users' home directories to .spamassassin-old, then killing the processes, they don't seem to be coming back. They did appear to have a fairly large bayesian_toks (about 2mb, which is at least a lot larger than my untrained one), which may or may not be a cause, perhaps the others here could give it a shot?
