Personally I started with Redhat 9 and after the Fedora thing I tried Suse 9
and that's what I'm currently using, sure others have their preferences but
they both seem idiot proof as I installed them and got them working very
quickly :-)

I started out using this guide -
http://www.advosys.ca/papers/printable/postfix-filtering.html and sort of
bastardised it with bits from other guides as I went along.

I would suggest Postfix as the MTA, I'll admit I've not tried any other MTAs
but having used Postfix I see no reason to as it just seems damned good and
fast/stable..

What I would suggest is get a basic linux system up and running, then get
the MTA running so it accepts mail for your domains and passes it to the
Exchange server, then once that's working look at getting Spamassassin in
place.. the payoff's worth it.
