Doug, Nice outline, but this is the process outlined in the CF docs (working with Verity). It is very east to switch to K2 - just not a good idea!
Maybe anyone consideing using Full Test search should consider Lucene - it is not only more reliable but faster and doesn't cost a small fortune if you need to upgrade. If I were you I would ditch any need for Verity in your apps at all - I don't understand why MM still package it rather than Lucene.
