You are not missing anything.  What you describe is panel construction.
Perhaps it is not too common today.  We have such a ceiling in one of our
buildings constructed in the 1940's.  Of course back then they also
required adjacent lines to have the heads staggered.  So we have a
staggered pine tree sprinkler layout with deflectors at about 20 inches
below the deck.  Panels are formed by concrete beams into about 270 square
foot bays. It has been in the code for that many years.  It is still
applicable.
