Clean rooms are an example of where interstitial spaces need sprinklers. I believe this info is found in NFPA 318. Otherwise, a non-combustible concealed space (interstitial space) does not require sprinklers per NFPA 13. Look at section 8.15.1 (2010 ed.) which addresses concealed spaces requiring sprinklers..
