You can still re-arrange the top level menu entries on the Controller with 7.8. Just scroll to the entry you want to change, and then press and hold the big central button until a menu comes up. This gives the option to hide that entry, move it up or move it down. It's actually a lot easier to use than the old way. There is also an option somewhere to restore all the hidden main menu options, I think it might be in Settings->Advanced.
I have no idea how you have put up with 7.5 all this time, it's diabolical. 7.6.2 was very reliable and has been available for years, and every release since 7.6.2 has been very stable.
