Yes but ideally you need a site to site VPN. If you haven't got routers
that will do that then the next level of security down is static IPs at
both ends. Here you set up port forwarding rules on your router to allow
traffic from his end into your server. You limit access to his IP only.

Before going any further what routers have you both got?
