OK, but what does that mean to me? Should I change to the "stable" or stay with the nightly's? (I have not ever experienced any problems with the nightly's)
What you should do or not is up to you. Many have asked for a stable release for a while now. The 7.9.0 development versions got updated whenever I applied a change. This could have broken things any time.
Now with the release of 7.9.0, that version will no longer change. If you still need the kick of living on the edge, you'll have to install 7.9.1 (or whatever comes next) - which won't happen automatically.
Am I loosing out on any features by continuing to aim for the moving target?
7.9.1 will only see bug fixes, no new features. This should still be rather stable.
