I don't believe there's a server setting that controls this. From what I can tell playing all songs by an artist always sorts them into album name, track number order. Which seems pretty arbitrary to me.
Similarly, playing all songs in a genre also sorts them by album name, track number. Without even any consideration for the album artist's name.
