I also have Cat6 cabling and gigabit speed router/switch. If I edit files with mp3tag (or any file edit program) sitting on my music server (equivalent to your NAS in terms of file storage), then this takes MUCH longer than if I edit files on USB drive attached to my computer running mp3tag. I don't think it is the network speed here that causes more time. Don't really know how it works exactly, but it must have something to do with bringing the file from server back to computer running mp3tag, modifying it, then transporting the entire file back across the network to the server.
