Embedded cover art in files is an MP3 thing in the main. If you dont use your music in anything other than LMS there is no reason to bloat your files with cover art - just use a single decent folder.jpg or cover.jpg in the album folder. LMS creates various sized versions in any case for where it needs them and stores them in the cache for easy quick retrieval. Most decent rippers can be configured to do this.
