Though of course Michael, you had the right idea! Where I am presently,
I have 2 Touch plus 1 Radio. And I've just used the Radio to chose to
control a Touch, and then managed to push the Touch off LMS to MySB. So
I guess Controller would do the same, rooting round Menus a bit....

Exactly: the Controller was the first device to run what became known as SqueezePlay. It's the same software on Radio/Touch, only the "Select Player" item is better hidden.

I guess, being lazy, I'm trying to accomplish the same from where I
actually am (at a keyboard, on the 'net) or from what will always be
with me (phone) rather than from a physical piece of SB kit.

Check out the "disconnect" command in the CLI documentation

http://htmlpreview.github.io/?https://raw.githubusercontent.com/Logitech/slimserver/public/7.9/HTML/EN/html/docs/cli-api.html

You could use telnet or netcat or something to send that command to LMS. But please beware that if you try to send a player to an IP which does not exist, the player might end up in disconnected state, requiring direct interaction to connect it again. Therefore this command is not available on the Receiver, as it lacks direct input (IIRC).
