What I do here, since I require imaps instead of normal imap, is that I
firewall out the normal imap port for everybody, but leave imaps open
for localhost. I believe it should already be default for your firewall
to leave all loopback ports open, but if it isn't, it shouldn't be hard
to do. smtp STARTTLS, however, would be a different story. You can't
just create a stunnel wrapper. Either you can write your own (harder,
slower), or you could set up an SMTP server on the webserver that's used
only for sending mail from SquirrelMail. It should work.
