Yes although SquirrelMail uses IMAP instead of POP to access the mail
store. You might see better performance if you use an IMAP proxy on the
web server but that open a whole new can of worms.

Take the same measures you would take on any 'Net visable box. Obviously,
SM needs a web server+PHP but you could, for example, limit access to the
web server from your network.

I'm currenly serving mail for 7500 users with over 800 users having
accessed SM at least once.

That is a mail server issue. You should consult the docs for your MTA and
perhaps your IMAP server.
