So I can doc this, is this an accurate statement: when using Squirrelmail with Sendmail, if SELinux is enabled on the FC3 machine, the FC3 machine will refuse access to the sendmail binary. To configure Squirrelmail to allow to for this, try setting SquirrelMail to use SMTP instead of Sendmail (run the config tool config/conf.pl, and go to server settings).
That is one solution yes. The other is to permit apache access to using the sendmail binaries. Unfortunately I've not played with selinux, so I do not know the commands to grant that permission. Gone are the day where you can do a simple chmod ;)
