[SM-USERS] Default destination

I have to configure SM into a system where all the users can only send mail to a unique address (something like [EMAIL PROTECTED]), so I want to disable the 'To:' field and set a defaul address. Does anyone know which function I have to change to set this default address? I've found the field and already disabled it.
