Use any type of filesystem that can be shared then, GFS, a good raid array.
It doesn't matter.
NFS works fine for me on a small to mid sized mailserver (I only move about
120 messages a day, 75% local average size of 1M)

As long as your NFS server can provide the proper access speed and time is
synched I do not forsee any big problems.
I would assume there are several people who use a similar setup.
