You need to set your templates' character set correctly. The default
templates contain only the US-ASCII character subset. They will be sent to
the browser as either UTF-8 (if supported by the browser), or ISO-8859-1, if
the browser does not support UTF-8.
Since you will now be adding content outside of the US-ASCII subset, you
will need to edit html/en-us/CHARSET, and leave it as either UTF-8 or
ISO-8859-1. When editing the templates your editor should use the same
character set as set in the CHARSET file.
You should be using UTF-8, otherwise your templates will not be able to show
mail content unless it can be converted to ISO-8859-1.
