This varies from mailing list to mailing list.

For example some IETF Mailing Lists (e.g. OpenPGP) when mangling the e-mail they also change "From" header so that there is no issue with the DKIM signature.

https://lists.sr.ht/ uses a different approach - they leave the mail unmodified, just append List-* headers and relay it to all subscribers. This way the mail still passes DKIM checks. (Example: click "details" on this thread [0]).
