Any pointers as to what software is still available for OS9.1 would be much appreciated. I've tried searching for Open Source software on the internet, but thus far without much luck.

Open source was not a big thing in the pre-OS X Mac world, but there's plenty of free/shareware. You could look at iCab for a web browser. Version 2.9.8 is the latest and V3.0 with big improvements is being beta-tested now.

The mail program Eudora has a free ad-supported version - Eudora 6.1.1 Classic http://www.eudora.com/techsupport/kb/2350hq.html will run on 9.1, or look at PowerMail.
AppleWorks is very capable. I use 6.2.8 with OS 9.1. Also, there's a separate commercial utility called icWord ( I-see-Word, http://www.panergy-software.com/ ) that converts Word documents if you need to read them.
QuickTime 6 will handle many video/audio formats - 6.0.3 is the last version for OS 9.1, I believe. For OGG Vorbis files (read and write) you'll need an extra free QuickTime component available here:

Pointers as to what kinds of video these things can manage would also be appreciated.
Video will not be fast unless you get a PCI graphics card - quite cheap used now. A Voodoo3 2000 card, for instance, would make a big difference. (Also good for games, of course.) The QT6 player handles most formats, and can be extended with mostly-free "components" like the Vorbis one, e.g. DivX http://www.divx.com/divx/download/ .

Audion 3 is a good free music player: http://www.panic.com/audion/
GraphicConverter 5.5.2 handles a vast number of picture formats and has useful features for picture manipulation, slide-shows etc. Shareware.

And if you don't already have it in your Extensions folder in the System folder, CarbonLib 1.6 from Apple will allow you to run a lot of newish software that won't work without it.
