One thing you can try is to hold the chisel
with your thumb extended along the shank of the chisel
(rather than wrapped around and over your finger tips)
This position seems to set up a body dynamic that
helps avoid hand strikes.
Only practice will make you better.
Don't limit your movement to your wrist; use at least your forearm
Develop your swing--you can do this and still strike
lightly.
Eventually you may want to learn to use both hands.
This can come in handy if you are working on a piece that
requires symmetry (eyes, lips, nose).
Try to seek out some books on stone carving, they may show
pictures of carvers holding their chisels.
