First run:
iscsitadm modify admin -d /export/home
Then create your target and you don't need to specify the backing store.
iscsitadm create target -z 10g test
Now, do the ESX stuff.

Rick,
Ok I'll outline everything I have done to make sure I'm doing this
right and then If I have screwed up please correct me.
iscsitadm create target -z 10g -b /export/home/test test
iscsitadm list target
The target I just made shows up.
Go into VMware ESX 3.0.1 enable the iSCSI s/w initiator. Allowed it
through the ESX firewall and then hit rescan.
Do another:
iscsitadm list target
Nothing shows up.
bash-3.00# cat /etc/iscsi/target_config.xml
<config version='1.0'>
</config>
bash-3.00#
I never did an ISCSI modify admin -d
So I don't have either of the other things for you.
