Ken, it's not quite what you're looking to do, but you might find my post in ha-clusters interesting. We're trying to do something similar to you, but while we're waiting for HA-iSCSI, we're thinking of clustering ZFS over the network.
It means your storage is reliable, but you do have a single point of failure in iSCSI. However it should be simple to upgrade to HA-iSCSI once it's available.
