I'm afraid you have to destroy, unless you have 2 extra spare drives.
if you have 2 extra disks you could do:
current setup:
pool
disk1
disk2
zpool attach pool disk1 disk3
zpool attach pool disk2 disk4
it will look like:
pool
mirror
disk1
disk3
mirror
disk2
disk4
So then you are striping over 2 mirrors
