I have a theory. This is one of the newer 'no button' iPhones, correct? My guess is that the user interface for Subsurface makes iOS think that you are using gestures and it sends nonsensical touch and button signals to the app. I don't have such an iPhone. I tried to replicate your observations with my iPad, which sadly is using this horrible, horrible gesture nonsense - as much as I try to avoid it (I so wich there was an iPad with the fast processor / GPU combination but a physical home button - but I digress) and can't, but maybe there the positions / sizes of the UI elements are different enough from your phone that things just don't happen the same way... Again, completely random theory and could be way off.
