Just to follow up and close out this thread, we got the audio/video redirection to work with the following configuration:
Sun Ray Server 4.1 uttsc 2.1_25 Sun Ray Connector for VMware View Manager 1.1_08 (REV 2009.03.10.09.23) View Manager 3.0 Virtual Machine guest installation sequence: Windows XP SP2 > Install VMware Tools > Install SP3 > Install View Agent > Install Sun MMR Default settings for Multimedia Redirect (enabled) in View Manager Global Policies. We get the icon in the toolbar indicating the video and audio redirection for supported encodings, in the same fashion as with non-view connections. I assume you have 'MMR Redirection' enabled in the View properties? I'm uncertain where to find this setting.
