Just to make sure: you did use "utresadm" to set the desired display resolutions as known to SRSS in general, and as the defaults for your DTU/Token in particular? I am not sure about desktop resolution settings, but I'd start with grepping around in /etc/ and /usr/ X11-related directories for those resolutions you do see in the menu.
