Hi Paul, I'm in the process of doing pretty much what you are planning to do, with a slightly different tact.
In order to keep the OS 8.1 system running I first installed a second internal HD and initialized it with the latest HDToolkit. I clean nstalled OS 9.1 on the new drive. I now can start up on either OS by selecting the next start up drive before shutdown. Can now play with OS 9.1 and work with OS 8.1. Next I will add a Powerlogic 350 G3 processor. When I have installed and moved just what I currently use to the new system I'll wipe out all the old junk on the olld drive and use it as file back up for the new drive.
