I've found that the combination of MacOS 8.6 + the now-discontinued-but-still-great Connectix Speed Doubler 8.1.2 really helps perceived performance on the 7200s. Mac OS 9.x seems particularly slow on these systems, and Speed Doubler is not compatible with 9.x. The biggest drawback with 8.6 is that some of the most recent software (e.g. Quicken 2003) requires 9.1 or higher.
RAM is also a big factor.
