Eric,

YDL would be a good choice for a lot of reasons, since they seem to be
really committed to support of the PPC platform. The installer is
comparatively straight-forward and leads you through the drive setup with
minimal stress.

The boot process is much the same with OS X and an S900; a "pre-boot" OS 9
partition is setup from which BootX selects either a CD-ROM or other disk on
a hard drive to continue the process. Keep this in mind and the
documentation will make more sense ;)

I highly recommend the KDE window manager, but YMMV.
