Then I remember a few years back I bought another J700 power supply when
they were liquidating them at Small Dog (just to have one on hand). So I took a look at this and it has a sticker that says "Better quality with temperature controlled fan". Does anyone know if this is possibly a newer quieter fan in this
power supply? I don't think the original fan is temperature controlled.

There could be modifications to the original supply like that, but I doubt it. Either the power supply maker or Umax would have to have decided it was worth spending some more money on. Which could have happened, but seems unlikely.

IIRC the power connector for the PS fan is two wired and temp controlled fans usually have three wires, so such a change would require a modification to the PS circuit board in addition to a change in fans installed--which spells retooling cost.

Also, I haven't looked lately but I think there's also a 2nd fan in the J700; I'm not
sure but is that one drawing air into the machine? Does anyone have any
 experience with replacing these fans?

There are spaces for three fans in the J700 and S900.

They all have the power supply fan--or better, because if they don't the power supply will overheat. :-) The PS fan is an 80mm fan. It's not actually that hard to replace. I've opened up one of the PSs and IIRC, the wires are actually on a plug to the PS circuit board, so there's no soldering involved. Just lots of little screws and maybe (I don't remember) some sheet metal tabs to bend. However, I also found that the fan in my power supply was about as quiet as any replacement I could find, so there didn't seem to be much point to replacing it. YMMV.

I believe that all shipped J700s and S900s also came with a second fan installed below (to the left on J700) the power supply. This is a rear exhaust fan. The rear exhaust fan is a 90 or 92 mm fan.

There is also a space for a front intake fan and a plastic bracket for mounting this fan is included. Also, there's a power connection pin header on the front of the motherboard to power the front fan. However, the front fan is not installed as a stock item. The space allows for an 80 mm fan as the front fan.
