Chatzilla doesn't need to be installed at all. IIRC, a custom install allows you to unselect it. If not, then you can go in Tools -> Add-Ons to uninstall it from there. It's not part of SM itself.

I don't think Composer can be dissociated from SM, though (and I'm not sure what sort of security problem it might pose beyond the same ones as the browser). That being said, it may be possible to disable it in the prefs; someone else more knowledgeable than me would have to help you on that front, though.
