I can see no way that a simple Safe Mode start would kill your
preferences and accounts. Safe Mode mostly only disables add-ons.
What exactly in Preferences did you change? (Preferences are not
the same as Accounts.)

Check 'Reset all..' or all checkboxes and then press 'Make Changes
and Restart'. But have a current backup of your profile ready. ;)
Doesn't say anything about deleting email accounts ... :-/
