I am having an issue I see no way to address in SeaMonkey email. The
"Inbox" folder properly lists the "From" and the "Sent" folder properly
lists the "Recipient", but other folders list the "From" even if it is
not appropriate and you want to list the "Recipient" instead.
In my case I am using SeaMonkey to take the place of earlier mail
clients and have thus brought the messages sent and received from those
clients over as folders. So I have "Old_Sent", "Old_Inbox",
"Older_Sent" and "Older_Inbox" as folders under the other folders. I of
course would like to show the "Recipient" in the "Old_Sent" and the
"Older_Sent" folders by default, but of course I have to explicitly
display it when I want to see it and change it back or it overrides on
all the other folders as well.
Is there a way to define columns to display for individual folders to
allow me to see the various sent folders appropriately by default?

Perhaps I'm not understanding your problem... Why don't you just set the
columns to how you want them? Click the furthest column header (looks
like a down arrow over a box frame) and select 'Recipient'. That will
then display the recipient column - the can then drag the column to
whatever position you wish on column heading bar. You can uncheck the
'From' column if you don't want it to appear in the column headers.
The problem is that if I change from "From" to "Recipient" in the
"Old_Sent" folder it ALSO changes ALL FOLDERS EXCEPT THE "Inbox" to show
"Recipient" instead of "From" even when it is not appropriate to do so!
So it appears that all folders except the "Inbox" folder are set from
the same template. I want to keep my Inbox folders showing the "From"
but have my Sent folders showing the "Recipent" in the folder index.
From its documentation the "Folder Flags" add-on should allow me to do
exactly what I want, but the add-on is not compatible with the current
release of SeaMonkey and the author did not reply to a request for it to
be updated. So I am looking for another way to address the issue.
