There are several ways of "enhancing" bits of text in plain-text emails.
You've just shown us one: ALL CAPS, also known as SHOUTING. Bolding can
be rendered with *asterisks* and italics with /slashes/ if you like, and
of course underline with _underscore_ -- does that help?
But if you really want to reply in HTML to a plain-text message, just
hold down the Shift key while clicking the "Reply" button at the top of
the SM window.
Paul, Ray was trying to "Edit Message as New". Does holding down the
CTRL* whilst clicking the "Edit Message as New" switch the message to
HTML mode??
(* I think its CTRL but may be ALT or something else)
