Sure there is, it's exactly parallel to the situation with the "Compose" button. SHIFT-Reply gets you a reply in HTML, though it may not be obvious -- the quoted message to which you're replying will still be in your plain-text font.

I tested the individual HTML preference for an address book dweller,
no cheese.

I wonder what's up with that -- something we're doing wrong, or a feature that has atrophied like the human appendix.
