it's not trainable.  You can turn it off in the Preferences under "Junk
& Suspect Mail" in the "Mail & Newsgroups" section.

the occasional "scam" warning.  Different from "junk" which I never get.

Junk and scam are different things. The settings are entirely separate from one another. Look in Preferences/Options > Mail & Newsgroups > Junk & Suspect Mail and you will see two separate sections in there.
