Forgive my ignorance of the hacking world, but how is a Beta of any
software more secure than stable version?

If SeaMonkey stable were to have critical security vulnerabilities that
were fixed in the current beta, it would possibly be more secure to be
running the beta. The caveat there is that beta code is often unstable
and, therefore, can present unforeseen difficulties.
