if Seamonkey implements in them default settings which demolish your
choice and work without to ask you if it is really good so?

The options you're looking for are at

Edit | Preferences | Advanced | Software Installation
        ...
        SeaMonkey
        ...
        [ ] Automatically download and install the update

If you uncheck this box, SM can still check for updates and notify you that they're available, but it won't install them until you say so.

If you don't want to be nagged, also uncheck:
        [ ] Automatically check for updates
in the same dialog.

After you've updated your preferences, go ahead and install the version you like. Your profile will remember your settings, so you won't be updated against your will.
