wrong. I'm not seeing any downloads of Adrian's installers (and I think
I did mine at about 2.49, with subsequent incremental updates).
Anything that I need to be aware of before attempting this transition?

Smithy, I'm no developer, just a user like yourself, but ......
The question I would have to ask you is why do you want to remove the
(Adrian's) SM 2.51 installation before you install the (Project's) SM
2.49.1??
Sure you could uninstall, but why?? Leave the 2.51 in place and then
do a *CUSTOM* install of 2.49.1 to any (other) location that you'd
like. That way, if the new, Custom install mucks up, you have the 2.51
to fall back on (Don't try using both versions at the same time. It
probably would not work ... unless you've done some other fiddling!!).
I currently have about a half dozen SM's installed on this Laptop,
dating back to probably Ver 2.0 or more!
Personnaly I always do an uninstall of the current version before
installing the new version.
And also, in never want to do an install of an earlier version with the
current profile.
Anyway I never downgrade SM.
And I never tested to have two different versions on my pc.
