seems to let me put specific folder (aka newsgroups).

Ant, I just checked (and created a filter for 'Support TheFork') and
applied it to this entire server.
If you click on "Filters for:" on the Message Filters screen, you should
get a list of all the newsgroups you subscribe to on a server, and then
a listing of each of the News Server Accounts. If you select the
appropriate Server Name, then you can select a particular group to apply
the filter to, or at the top of the list of groups, you should see the
Account name listed.
Selecting the Account name on the groups listing, you apply the filter
to all the groups you subscribe to on that server.
