Sadly, the documentation still needs a little work.  Old-hand UNIX types
would recognize this, but that doesn't mean that everyone would...

The ">" is supposed to indicate your shell prompt.  All you really type
is the ./start-freenet.sh after it, and you type it at whatever point
your shell waits for input -- whether it's a > or a % or a # or "bash"
or any other indicator that your shell is saying "I'm ready!".
