1. We'd like to include in our renewal ltr how much in total the donor has
given (in both dues and contributions) over the most recent 12 month period
(not calendar year, or fiscal year) so we can at least try to maintain
donors at that same level by reminding them of the level they're already
giving at. But I can't figure out how to do a query like this?

Unless I missunderstand your problem, it is completely straight forward. I
went to the Payment entry screen and put the date range in the Post Date
field and >=100 in the amount field (assuming you don't want to find someone
who gave $99.50). This does not get people who gave a bunch of small
donations that total more than $100. Changing the fiscal year trick only
works if you want to deal with exactly one year's worth of data. That would
allow you to get the sum of small donations. Going beyond this almost
certainly requires writing a script or doing the date ranges in 1 year
pieces.
