Sounds like the length of your letter just exceedes one page.  If you
see a heavy line near the bottom of your text in Layout mode, that's
what's happening.  You need to modify the layout to get rid of that line
or make sure the body part doesn't extend over that line.  Play around
with this and get back if this doesn't take care of the problem.

Did you truly delete the field, or just remove it from the layout?  If
the former, I know of no built-in routines that hinge on the Hobbies
field.  You could re-create the field pretty easily just by navigating
to the "Profile" file and creating a new text field called "BIO:
HOBBIES" (no quotes).  Any data formerly in that field would, of course,
have been lost.  If the latter is the case, the field still exists and
you can just re-place it on the layout using the Field tool in layout
mode.  Read the Filemaker manual about dealing with layouts.
