This question may have to do with the fact that the field names don't
seem to be included in exports to tab-delimited files (perhaps also to
comma-quote delimited files, though I haven't done on of those in a
while).
I've wondered about this as well, and haven't found a solution yet.
When using these data files for mail merges in other programs such as
Word, it is difficult to assign the correct fields to the correct
location in the merge b/c there's no identifier. In addition, since
Word/Excel choose the first line as the Field Name line, I seem to
recall that without the field name in the export, the first record is
skipped as if it were the field name.
Whether or not this is the question being asked in this thread, how do
you get the field names to export with the data?
