Kris,
You can sort by any fields at all in ebase.
If you are printing outside of ebase, you may find this useful as I do: I
export records out of ebase and sort the in Excel.
If you want to sort in Ebase, go to the address card screen, click on
scripts, then select Sort. Add whichever sort fields you are interested in
from the left column to the right column. The fields in the left are
available fields (all fields in ebase), and the right fields are the ones
which ebase will use to sort.

I am going to merge a 5000 name mailing list into our ebase database,
then, I will want to create a sort for some of these people by creating a
letter with a source code. What are the different fields (other than
those on the first page of the contact card, by which I can create a sort?
