To partially respond to my own question. Since the field that is used to store the body text is a "calculated" field it can not contain the formatting information. (It needs to be a calculated field because of the merge fields that can be added to the text.)
Hence, I think the only 2 options are either using special characters (if they exist in Filemaker) or hard-coding the layout.
