I just tested this: Running OSX Server and FileMaker Pro 5.5.
Opened a database file, changed it to multi-user. Opened FileMaker Pro
5.5 on another machine (also running OSX), clicked "Hosts"
and the file shows up and opens and works just fine.
Be sure that filesharing to the files directly is not permitted.
While that won't prevent Host-Client sharing, you want to be sure that
the files are opened only by one copy of FileMaker, and that multiple
users access the database only via the hosting system.
OSX Server is not very different from OSX. It has more GUI
features and some additonal functionality, but how things work in the
OS itself are AFAIK the same.
If you're still having trouble, say more about the configurations
you're working with and exactly what happens when you try to
connect.
